Like most far-from-Hispanic Americans, we decided to celebrate Cinco de Mayo with a fun dinner. I tried out a new recipe from a good friend and made sweet pork tacos. (Thanks MaryAnn!) Since it was just the two of us and I knew we would have plenty of leftovers already, I decided to not make the cilantro sauce and rice recipes she also included. I improvised and bought a small bag of instant Mexican rice and a bottle of southwest ranch dressing instead (highly recommended!). We used corn tortillas which were yummy but not as sturdy as flour tortillas. The recipe was pretty simple: 1 cup of salsa and 1 1/4 cups of brown sugar. Cook in the crock pot for about 3 hours (with a 1 pound roast at least).
It turned out great and even though Mark and I both ate more than we probably needed, we still have leftovers in our fridge!
I forgot to post this picture after Easter. I decided it would be fun to do some little Easter baskets for each other. Not wanting to go overboard, we set a budget of $10. And since we did this at about 9pm the night before, we both were under budget due to lack of selection. The purple bowl on the left is Marks, the one of the right is for the soda-aholic wife of his. =)
